The standard is based on
- Food hazard analysis: biological, chemical and physical

- Deployment of critical control limits as well as preventive measures, i.e. minimal cooking temperature and time
- Monitoring of the critical control points
- Performance of correct actions
- Log maintenance
- Systematic and constant audit of the system in-house by independent external certification bodies
